Lunch Closing Duties Kitchen

 Clean all surfaces with antibacterial spray with a clean cloth.  Wipe yogurt machine – clean at end of the day! (Monday, Wednesday and Friday)  Throw away any leftover crackers from bread baskets and put away.  Clean the ice tea machine or brew more for dinner service.  Clean cappuccino machine.  Polish cutlery from lunch service.  Wipe surfaces.  Make roll ups if necessary for the next day. Salad bar  Take all food from the salad bar back on to the trolley.  Put back in the kitchen/fridge and leave for the chefs to refill.  Turn off the soup heater and give back to the kitchen.  Put gazpacho in back fridge.  Place all plates back under the salad bar and refill for the next day. (Take out dinner plates if there is dinner service)  Wipe down all the surfaces of the salad bar and remove any food left on the ice.  If there is dinner, then just refill ice. Food Expeditor  Wash all lids from the salad dressings and place back on and put in the fridge.  Clean condiment bottles and put back in the fridge.  Breakdown chopping station.  Put all spoons and underliners away.  Help with the salad bar.  Clean the hotline.
