JULY 2022 edition

Highlighting the news and events of JUNE 2022.

We welcome our new FOOD and BEVERAGE DIRECTOR

DAVID KENT

Upon first meeting David, I was struck by how personable he is. He is a man who exudes confidence and actually listens. He is also definitely a family man, as you can see from the picture he chose for his introduction to our membership, which is one featuring not just him but also his wife of 25 years,

Lisa, and their 14 year old daughter, Addison, both of whom he is very proud. Lisa is an administrator at Banner Health Association, one of the largest non-profit health care systems in the country, headquartered in Arizona, and she will be able to work remotely from Florida. She is also a recent cancer survivor. Addison is a competitive swimmer, who is ranked in the top 10 in the United States for her age group. She has five statewide titles to her credit and led her team to a fourth place finish in recent statewide competition. She will be entering the ninth grade at Jupiter Community High School this fall and looks forward to being on their swim team and competing for the state championship as she did in Arizona. Realizing that with the very full lives that both Lisa and Addison had in Arizona, the move to Florida would be a big transition for both of them. He told them that he would not accept Mr. Tucker’s offer of being our Director of Food and Beverage unless both of them approved of the move. Happily, they both did and are now looking forward to a new life in Florida.

BW What did you do immediately prior to coming to Frenchman’s Creek?

DK I was in Phoenix, Arizona working as the General Manager of the Marriott International Camelback Resort. This hotel was a favorite of Bill Marriott, the Executive Chairman of Marriott International. I had an opportunity to get to know him and hear his insights on new trends in hospitality, the ins and outs of customer service, and how associates-should be treated. Because of their long hours of service, he felt it important for them to have a life outside of work and to achieve a healthy work/life balance. Mr. Marriott believes that life outside of work is an opportunity to “make deposits into one’s emotional bank account.”

BW What Inspired you to pursue a career in hospitality?

DK When I was a boy, my father owned a local tavern in Benton Harbor, Michigan, where I was born and raised. My first job was working for my father helping him run the business. Later, I moved to Chicago, where my career broadened into the hotel and restaurant industry. Rich Melman, a local restauranteur and owner of the “Lettuce Entertain You,” restaurant chain, formed a partnership with Miami based restaurant, Joe’s Stone Crab and opened up a restaurant in Chicago based on an ele- vated version of Joe’s Stone Crab model, calling it Joe’s Seafood and Prime Steak House, offering fine dining with white glove service. And so I went from working in a tavern to white glove segment of the food and beverage industry.

BW What drew you to the position at Frenchman’s Creek ?

DK Mr. Tucker contacted me and explained the various challenges facing Frenchman’s in connec- tion with the Clubhouse construction project, but said the reward would be an unique opportunity to help run a world class facility offering world class services.

BW What do you believe are the main ramifications for the food and beverage operation of operat- ing out of temporary facilities for the next 2-3 years while the new clubhouse is being built ?

DK First and foremost, I want to encourage remembers to stay mindful that the facilities we will be operating out of are TEMPORARY and that a beautiful new permanent facility awaits us at the end of the construction period. In the mean time, the logistics will be a challenge, but I want to reassure members that the food and beverage team and I are up to the challenge! We are going from a 75,000 square foot facility to what is essentially a tent and several trailers. From a food and beverage standpoint, the primary constraint is the limited refrigeration and sanitation capacity. However, we are committed to delivering as much value to members as possible during this time.

BW In the short term, what can we expect with respect to our food and beverage operation?

DK One of the steps we are taking to ensure the success of the Club’s Food and Beverage operation during the transition and beyond, is the development and implementation of a comprehensive training program for new arrivals and those returning for the season from jobs up north. I believe that there is currently an opportunity to make significant improvements to service standards and consistency. Additionally, Chef Ernesto, in collaboration with the entire Culinary Team, is hard at work on a major upgrade for all of our menus. The goal is to streamline our

offerings and deliver a higher quality product that sets an elevated standard for Dining at the Club going forward.

Once the pavilion is open and we are getting ready for another busy season, we will be taking some other important steps to ensure excellence in the dining experience, including the implementation of a new reservations system that members can access using the new Frenchman’s mobile app, or by calling the Food and Beverage Office. I believe members have a right to expect world class service in every interaction they have with the Club, and I am committed to ensuring that our Food and Beverage operation consistently meets and when possible surpasses those expectations.

BW What is the vision for the dining venues in the new Clubhouse?

 The Main Dining Room for events and holidays, as well as a private dining room for smaller member events.

• The Sports Bar, featuring things like burgers, ribs, chicken wings, but prepared at the highest level of quality and enjoyed with the highest level of service.

• The 19th Hole, featuring breakfast, lunch and dinner in a casual dining environment

The Grille Room, an upscale Steak House

• The Pool Café at the Fitness Center, offering lunch and dinner in season, including fabulous sandwiches (including the lobster roll), salads, and fun cool events in the evenings.

• The Beach Club, featuring beach-themed dining and menus, and casual attire.

Thank you , David, for spending this time with me to introduce yourself to the membership. I think I speak for many of us when I say we look forward to your being at Frenchman’s for many years to come!

They have been coming to Frenchman’s for over 30 years and find it home, comfortable and lots of sports to enjoy. The beach club is a favorite and

through the years they have walked or biked every street at Frenchman’s. Mostly, they are happy to be near their father and can continue to create memories and a tradition for their two sons and daughter, Joby, Jimmy and Katie. Rick is retired and has a 10.5 golf index. Jane also is retired and she has an 11.2 golf index. She also enjoys tennis.

DEBBIE and JOEL BROOKS are elated to have bought Maxcine and Mitchell Aigen’s home on Limoges Lane to continue Debbie’s family's generation.

Joel and I picked Frenchman's Creek to live for many rea- sons. My Mother and Father, Shirley & Bob Kaplan, built their home at Frenchman's Creek in 1986. Joel and I would go down to visit my parents several times during the year with our 3 children. Frenchman's was so accommodat- ing and family friendly. The service was always impeccable and the services offered outstanding. Frenchman's Creek has not changed in over 36 plus years, it still carries a top notch reputation. We are so excited to become part of this community where our 3 married children and 3 grandsons can enjoy Florida to the utmost. The best blessing is that our entire family can be together with my Dad(Gipa) and Anita(Gigi), an incredible partner to my dad and a cher- ished and loved member of our family.
