BEVERAGE TERMS

TALL: A tall scotch and water would be in a large glass enough to hold twice the water with the standard amount of scotch. Usually this glass is the same diameter as other glasses but at least an inch taller. We use highball glasses. TWIST: Refers to a rind of fruit, primarily lemon, sometimes lime or orange, twisted over the drink and rubbed along the rim of the glass. UP: Means no ice or mix, also referred to as shot, neat, straight and straight up. ROCKS: Refers to ICE, as in on the rocks. FRAPPE: Refers to crushed or shaved ice in a drink to “super chill”. Also called MIST. TAP: Sometimes called draft – refers to beer from a keg. WELL: Our most often used and least expensive liquors kept at easy reach behind the bar. HOUSE: Refers to categories of liquors. House being the least expensive. PREMIUM: Expensive, upscale brand. Served when specifically ordered on request. SQUEEZE: Refers to a lime or lemon quarter squeezed over a drink. DRY: as in “Dry Martini” refers to the use of dry vermouth. PERFECT: as in “Perfect Manhattan” refers to the use of equal parts of all ingredients. GIBSON: Cocktail onions as garnish. GIMLET: with lime juice.
