1) Prepare reports; make sure you have the correct amount of chits, end of shift, all servers report and that the chits are in the right order CORRECT ORDER FROM SMALLEST MEMBER NUMBER TO LARGEST!! 2) Complete: a. Dinner server report and daily report. b. Captain’s report indicating covers, revenue, average per check, daily specials and general remarks either positive/negative. c. Print a revenue report from Jonas listed by category. d. Fill out the dinner analysis which includes covers, walk-ins, guests and top 10 entrees sold on that night. e. Update reservation list and complete total weekly covers which is located at the end of the reservation list. f. Send 2 email reports, one to the managers and chefs such as Ernesto, Catalina, Kyle, Ashish, Beverage, Reservations and Beach Club and then send one to Mr. Goswami with a brief overview of the report. MAKE SURE ALL CHITS AND ANY OTHER DOCUMENTATION IS DROPPED OFF AT THE MAIN CLUB AND PUT IN THE ACCOUNTING MAIL BOX ON THAT NIGHT!!!!!
