Chef Kursten revealed her secret. “Caramelizing the banana for that nice flavor and crunch,” she said. She noted that when you have the right balance of sweetness and textures, it can end up being an enjoyable and easy bite. “Most people don’t order desserts thinking they are too sweet—it’s all about balance,” she said.

Chef Kursten has been with Frenchman’s Creek for 10 months, and gleaned her inspiration to pursue a career as a pastry chef from watching pastry competitions and challenge shows on The Food Network as a child. “It just looked like so much fun,” she said. “For a brief time, I went to school for Forensic Science, but it didn’t last long. I came back to pastry and have been in the industry ever since.”

Frenchman’s Creek Banana Split

Ingredients: 1 scoop vanilla ice cream 1 scoop chocolate ice cream

1 scoop raspberry chocolate chip ice cream 1 banana, peeled and cut in half lengthwise Candied peanuts, chopped, as needed Rainbow sprinkles, as needed Whipped cream, as needed Chocolate sauce, as needed Mixed berry compote, as needed Vanilla pineapple compote, as needed Raw sugar 3 Maraschino cherries

Steps: Scoop ice cream into desired bowl

Sprinkle raw sugar on the banana and use torch to caramelize, or place in oven under broiler until caramelized

Place caramelized banana on either side of the ice cream

Drizzle chocolate sauce on chocolate ice cream, berry compote on the raspberry ice cream and pineapple compote on the vanilla ice cream

Put a swirl of whipped cream on each scoop of ice cream

Sprinkle with peanuts and rainbow sprinkles, and top off with three maraschino cherries
