Lunch Buffet Breakdown

To breakdown the lunch buffet is very simple it is simply taking the food off the salad bar back onto the Queen Mary and taking it back to the cold kitchen. We then need to clean out the dirty parts of ice and refill the ice. The fruit station then needs to be cleaned and fluffed ready for the dinner. Crackers must be taken out and wrapped in a plastic bag wrap along with the chips, oyster crackers and premium crackers. The soups must be taken back upstairs to the main kitchen. After this, the specials must be taken away and thrown in the trash and the fluffing changed if needed. Then it has to be cleaned up everywhere and the toaster should be put back into the cage in the back office. The cookies need to stay out but they need to look presentable rather than being replaced as this has to be done for the dinner shift. The last thing that needs to be done for breaking down the salad bar, if there is enough time, is to refill the ice. Within the kitchen you just have to ensure that you clean up everything and set up for the dinner shift including butter trays, side plates, lemon wedges and bread baskets. Also, take the laundry to housekeeping to start fresh for the dinner shift.
