PM Closing Duties and Captains Checklists The Checklist is the PM Captains last and most important priority and for Captains only. However, the duties are the Trainees first priority. It is the captain’s responsibility to assign and control the duties. After completing the checklist file it in the designated folder.

Beach Club Captain Closing Check List

Lunch Kitchen

Check .. .. Lunch kitchen is clean and ready for next day operation

..Open the curtains in the lunch kitchen (refill the chinawares and ramekins) .. Chopping Bowls and Choppers are clean and ready for next day (3 choppers) - Supplies for Lunch are restocked (To Go containers, Spoons, remikens, etc.)

Patio Bar & Breakdown Station:

- Tv & Off & Covered - Bar is Clean, Trash is taken out and new bags are in trash cans - Liquor has been put in the cabinet - Bar is ready for next day operation (cups, straws, to go cups, etc have been restocked) - Counters have been wiped clean - Glass racks are in place, Plastic cups are stored in Cabinet - Breakdown station is clean (no plates, silver left to go to dishwashwer, trash empty, etc) - Decoration are put away

Patio Tables:

..Tables and chair are in correct position and clean ready for next day. - Lights are turned off

Kitchen and Back Area

.. Check Water Machine & put staff cups to wash - Open Fridge and make sure nothing is in it that doesn’t belong and everything is covered - Ice tea machine is clean, the spout is on cleaning solution overnight (Machine left ON) - WMF Machine is off and clean - Cups are restocked on warmer, warmer is off

- Bread warmer is off and clean of crumbs ..Bring the dirty hand towels to laundry. - Check Towel warmer is empty, clean and off ..Milk in the creamers should be thrown evey night. ..Wash the teapots. ..Restocked the coffee station. - all counters are clean - Turn off Light

Lounge, Dining Room

.. Check Lounge (furniture in proper place, pillows fluffed, tables clean) ..Tables are set up properly for next day operation .. S&P and Sugar Caddies are on the tables clean and full .. Check that we have enough roll-ups for next day operation - Turn off and lock slidding doors to the patio (all 3 of them) .. All Silver has been piolished and sorted
