Breaking Down Dinner 1. Prepare roll ups for next day’s lunch (Make sure Side Stations are full). 2. Break down both beverage stations, clean the coffee machines and the frozen yoghurt machine. 3. Take the sugar caddies and candles from the tables in the main seating area (including salt and pepper from the tables in the lounge and patio) and put them back to where they belong. 4. Take off the table cloths and put them in the laundry cart. 5. Put the pencils on the tables in the main seating area only. 6. Take out the refilled fruit baskets back to the buffet area. 7.
