Rum:
Distilled from the fermented juice of sugar cane, cane syrup, or molasses. Aged in not charred barrels. Dark rums often have caramel added to them for flavor.
Light-bodied rums:
Dry with a slight molasses flavor. Two types
are:
1) white – most popular and most easily mixed 2) gold – a mixture of light and dark rums, sweeter with a more pronounced molasses taste. Favourite light rums come from Puerto Rico and the Virgin Islands.
Heavy-bodied rums: Darker and sweeter, with a more pungent bouquet, body and flavor. Distilled by a slower fermentation process which allows more time for a fuller, richer molasses-like body to develop. The well-known dark rums come from Jamaica, Martinique, Trinidad, Barbados.
