“Be fancy with it,” Chef Max said. “These seared crab cakes are a nice, light tropical dish for summer.”
Straight from the Kitchen: Crab Cake Dish Recipe and Ingredients Crab Cake: Yields 4-6 servings
Crab Cakes: Yields 4-6 servings
½ cup Tajin chili lime seasoning ¼ cup lime juice ¼ cup sugar ½ cup mirin ¼ bunch cilantro, chopped
Ingredients: 2 cans backfin crabmeat ½ cup Joe’s mustard sauce ½ cup gluten-free panko breadcrumbs 1 oz. pasteurized whole, liquid egg ¼ tbsp Seafood magic blackening spice ¼ cup of chopped chives 2 tbsp lemon zest
Steps: Mix all ingredients Marinate for at least three hours in the fridge.
Plantain Chips:
Steps: Mix all ingredients in mixing bowl Rest mix in refrigerator for 30 minutes Shape into 2.5 oz crab cakes Take the crab cake and place in cold pan to avoid scorching Using olive oil, drizzle it in the pan, searing the crab cake as the pan heats, until a golden crust appears Gently flip crab cake until crust appears on both sides Put crab cake into a separate pan, drizzle olive oil on top, and place in 350-degree oven for eight minutes If using a thermometer, aim for a temperature of 165-degrees Bake the crab cake to a golden, crispy crust Serve on a plate of arugula with mango relish and fried plantains.
Ingredients: 2 green plantains 1 tbsp curry seasoning
Steps: Slice plantains lengthwise into 1/16th of an inch thick slices Fry in 350-degree Fahrenheit deep fryer, dropping each single slice by itself, until crispy Season with Curry seasoning
Curry Spice
Ingredients: 3 tbsp yellow curry powder ½ cup granulated garlic ½ cup granulated onions
½ cup white sugar 3 tbsp kosher salt ½ tbsp togarashi spice
Macerated Mangoes: Yields 4-6 servings
Ingredients: 2 mangoes, peeled and diced
Steps: Blend all ingredients.
