ALL ABOUT THE OSPREY Known as the “fish hawk,” these unique birds mate for life.

Frenchman’s Creek
On top of a tree that has gone dead from a lightning strike at Frenchman’s Creek lies a nest built by ospreys. It’s the male osprey who sought out the twigs and sticks and brought them back to the female who arranged them into a nest—this is the role each plays. Jagged and appearing weather-beaten, the dead tree is one that is reminiscent of the harshest of winters in the Northeast but holds the dearest of osprey hatchlings after breeding season ends each April. These birds are loyal to one another, tending to family as the females incubate the eggs for at least a month, and the males bring home dead fish bits for all to eat. Female ospreys typically lay between two to three eggs, usually two to three days apart. “Not all at one time,” explained Burton Greenberg, longtime Frenchman’s Creek resident, and author of the Birds of Frenchman’s Creek booklet. “They tend to hatch each of the chicks three days apart.” But a disadvantage exists in the hatching schedule, Greenberg said. “The mother doesn’t differentiate between each hatchling and feeds the hungriest. By the time the third hatchling is born, it’s fighting for food and cannot compete . . . we lost a third baby this way.” Baby ospreys grow quickly, and usually after six to eight weeks pass, they can take flight. Like their parents, ospreys are predatorial and enjoy open spaces near the water. It’s no wonder an osprey nest exists here near the Frenchman’s Creek South golf course by the 9th hole and its golfing water hazard. Plus, it’s less than two miles from the Atlantic—close enough for the birds to fly to the ocean and dive for live fish. Ospreys love to hunt and crash into the water at 30 mph, and can submerge themselves up to three feet, sometimes carrying live fish that weigh half of their own weight back home to their nest. How far they roam is wide—they can migrate as far north as Alaska, and as far south as Mexico. At Frenchman’s Creek, osprey history is bittersweet. They migrated to the community within the last five to 10 years, Greenberg noted, but three to four years ago, a “good storm came through, and it disrupted the nest. Two eggs fell . . . one was smashed but the other intact.” Greenberg took the surviving egg to Busch Wildlife Sanctuary, a Jupiter-based non-profit organization that rehabilitates wildlife. “They incubated it, but nothing happened, it did not hatch,” he said. “I spoke with our former golf course manager to encourage having a platform built to create more stability for the nest.”
The result? So far, so good, with new osprey life this year, as two hatchlings were born, Greenberg added.
Osprey nests have popped up elsewhere in the community, or rather remnants of nests. Whether it’s the birds at the 9th hole South course, or new ones, they attempted to pull together sticks and twigs to create a home on the 12th hole of the North course, but little was built. And any activity or hatchlings beyond this attempt remain unknown.
Another platform off the green at the 5th hole on the South course exists, but little osprey activity has been recorded.

Checklist for Heat Exhaustion

Here we are - it’s the middle of summer, weather forecasters offer frequent heat index advisories and unless an ocean breeze comes along, outdoor life feels oppressive. It’s the way the month of August is built for us South Floridians. That’s why it’s vital to pay attention to signs of heat exhaustion. Heat exhaustion does not usually need emergency medical help if you’re able to cool down within 30 minutes. However, if it turns into heatstroke, it needs to be treated as an emergency. The symptoms of heat exhaustion are often the same in adults and children, although children may become irritable, too. If you notice someone showing signs of heat exhaustion, give them fluids and cool them down as soon as possible. Plus, follow these four steps: 1. Move them to a cool place. 2. Remove all unnecessary clothing like a jacket or socks. 3. Get them to drink a sports or re-hydration drink, like those with electrolytes, or cool water. 4. Cool their skin – spray or sponge them with cool water and fan them. Cold packs, wrapped in a cloth and put under the armpits or on the neck are good, too.

into the mixing bowl, fluff it and pick at it, then use one beaten egg and add it into the crabmeat.”
Tasting the best food can transport the palette to another land, much like the crab cake, which can stir thoughts of Maryland’s Chesapeake Bay, where the crabbing industry prospers. But, when a cousin to the banana—the plantain—is added to the mix, the dish takes on the tropics. Plantains are a plus as they contain Vitamin A, C, iron and magnesium. In this dish, Chef Maximiliano Cervantes, also known as Chef Max, highlighted this coastal food as light, savory, and easy to make. “You don’t have to get the whole jumbo lump crab meat, you want it nice and fluffy so it’s easy to pick through,” Chef Max said. “The first step is to toss the crab meat Chef Max from the Beach Club shows how to make Crab Cakes using the unexpected - plantains!
Next, add toasted breadcrumbs to the mixing bowl to create a binding and hold. Then, follow with “Joe’s mustard,” Chef Max recommended, adding the mustard to the crab cake bowl mixture.
“Our Joe’s mustard is homemade, we want to keep it light and not overdo it,” he added.
Mix all the ingredients together, and once mixed, toss in the spice seasoning, some chives if you want, and lemon zest. Continue to bind all ingredients together so you will be able to get a good form of crab cake. You can form a crab cake using your hand or a ring mold; at Frenchman’s “These seared crab cakes are a nice, light tropical dish for summer.” - Chef Max Once you shape the crab cake, select the pan for cooking—you want to start using a cold pan to avoid scorching. “We use olive oil,” Chef Max noted, “but you can use avocado oil or coconut oil.” After you sear the crab cake, and a nice golden crust appears, put it in a separate pan, drizzle olive oil on top, and place it in a 350-degree oven for eight minutes. Chef Max added, “if you want to use a thermometer to monitor the temperature, aim for 165-degrees to make sure it’s okay because of the egg in the recipe.” Creek, chefs use a ring mold as part of their standard protocol.

Crab Cakes: Yields 4-6 servings
½ cup Tajin chili lime seasoning ¼ cup lime juice ¼ cup sugar ½ cup mirin ¼ bunch cilantro, chopped
Ingredients: 2 cans backfin crabmeat ½ cup Joe’s mustard sauce ½ cup gluten-free panko breadcrumbs 1 oz. pasteurized whole, liquid egg ¼ tbsp Seafood magic blackening spice ¼ cup of chopped chives 2 tbsp lemon zest
Steps: Mix all ingredients Marinate for at least three hours in the fridge.
Plantain Chips:
Steps: Mix all ingredients in mixing bowl Rest mix in refrigerator for 30 minutes Shape into 2.5 oz crab cakes Take the crab cake and place in cold pan to avoid scorching Using olive oil, drizzle it in the pan, searing the crab cake as the pan heats, until a golden crust appears Gently flip crab cake until crust appears on both sides Put crab cake into a separate pan, drizzle olive oil on top, and place in 350-degree oven for eight minutes If using a thermometer, aim for a temperature of 165-degrees Bake the crab cake to a golden, crispy crust Serve on a plate of arugula with mango relish and fried plantains.

Steps: Slice plantains lengthwise into 1/16th of an inch thick slices Fry in 350-degree Fahrenheit deep fryer, dropping each single slice by itself, until crispy Season with Curry seasoning

National ice cream month may have ended in July, but at Frenchman’s Creek, its beloved banana split remains a dessert to remember. As Executive Pastry Chef Kursten Restivo noted, traditional banana splits have vanilla, chocolate and strawberry ice cream, but for members, “I know they love the Graeter’s Raspberry Chocolate Chip ice cream, so I thought that would be perfect.” Graeter’s Ice Cream uses a French Pot Process that, according to industry standards, is the smallest size to create their product. However, their process allows for the high-fat buttermilk to freeze, thereby eliminating air gaps and lumps. To add an extra savvy touch to satisfy a discerning sweet tooth,

Chef Kursten revealed her secret. “Caramelizing the banana for that nice flavor and crunch,” she said. She noted that when you have the right balance of sweetness and textures, it can end up being an enjoyable and easy bite. “Most people don’t order desserts thinking they are too sweet—it’s all about balance,” she said.
Chef Kursten has been with Frenchman’s Creek for 10 months, and gleaned her inspiration to pursue a career as a pastry chef from watching pastry competitions and challenge shows on The Food Network as a child. “It just looked like so much fun,” she said. “For a brief time, I went to school for Forensic Science, but it didn’t last long. I came back to pastry and have been in the industry ever since.”
Frenchman’s Creek Banana Split
Ingredients: 1 scoop vanilla ice cream 1 scoop chocolate ice cream
1 scoop raspberry chocolate chip ice cream 1 banana, peeled and cut in half lengthwise Candied peanuts, chopped, as needed Rainbow sprinkles, as needed Whipped cream, as needed Chocolate sauce, as needed Mixed berry compote, as needed Vanilla pineapple compote, as needed Raw sugar 3 Maraschino cherries
Steps: Scoop ice cream into desired bowl
Sprinkle raw sugar on the banana and use torch to caramelize, or place in oven under broiler until caramelized
Place caramelized banana on either side of the ice cream
Drizzle chocolate sauce on chocolate ice cream, berry compote on the raspberry ice cream and pineapple compote on the vanilla ice cream
Put a swirl of whipped cream on each scoop of ice cream
Sprinkle with peanuts and rainbow sprinkles, and top off with three maraschino cherries

We have now entered the dog days of summer, and the heat and humidity have really kicked in. Most likely, the month of August will not bring any reprieve either. Staying hydrated is of utmost importance, and we have staff out on both nines delivering cold water and chilled towels. Whenever the opportunity presents itself, find shade which will feel 10-15 degrees cooler. The heat and humidity produce thunderstorms with intense lighting, and they can develop in a hurry. Below is a friendly reminder about our ThorGuard system. ThorGuard Lightening Prediction System: The ThorGuard Lightening prediction system measures the energy in the atmosphere, and predicts the probability of a lightening strike within a specific area. Our system is set to measure a five-mile radius from the temporary golf shop. One long blast of the horn means there is imminent lightening danger. Also, orange strobe lights are located throughout the property (for the hearing impaired). If the orange strobe light is flashing, it indicates that we are in lightening suspension. Then, play is suspended and all golfers should immediately seek the nearest shelter. Three short blasts of the horn indicates the threatening weather has dissipated and it is safe to resume play. Everyone should remember that the system is a prediction system and is not foolproof and one should always assess the threat risk and use their best judgment. The 2024-2025 Seasonal Golf Calendar is nearly complete and will be released in early August. The Golf & Greens Committee has reviewed this seasons calendar and there have been some adjustments to event formats, and changes to the

PRO TIP Most golf courses, including Frenchman’s Creek, have those dreaded collection areas around the green complexes - similar to the right side on 1 South green, 2 South and 16 South. Sometimes, these are very tricky tight lies that make the steadiest of hands shake. Usually, the shot requires some type of lofted shot with a 56º or 60º wedge. Because of the tight lie, using such a lofted club increases the chances of chunking it or flinching and blading it across the green. Some golfers may prefer to putt it, minimizing the risk of hitting it heavy or thin, but the trade out is very little control on how far it will roll out if you hit it too hard, or leaving it way short. The reason is you did not hit it hard enough. I would suggest that you take one of your

hybrids, either a 4 or 5, chock way down on it almost to the metal on the bottom of the grip and stoke it like a putt. The loft on the hybrid, which is not much, 18 to 21 degrees, will create enough back spin to control the roll out, and not risk hitting it heavy or thin.
Give it a few tries, and I think this will become a go-to shot when playing in those types of conditions.

No matter if a tennis or Creek Ball player is a beginner or expert, the mantra remains the same—keep your eye on the ball. At this year’s Fourth of July event, a second mantra assisted players as they managed extreme temperatures—hydrate. Under a local heat advisory, club members faced 90-degree temperatures. Still, the brutality of the sweltering heat and high humidity did not deter players from enjoying friendly competition and camaraderie. A total of 21 members participated, and several members shared that despite the heat, the holiday event was a success. Liz Storch, an avid tennis player, said, “Paulo did a great job organizing the event and it was well-attended. I played in the tennis round-robin, not the Creek Ball part of it—although everyone was mutually supportive, and the day was filled with lots of laughs.” Despite the temperatures, Mrs. Storch shared, “I love being out there, even in this heat. We love our racquet sports . . . my husband, Lee, plays every day, and I play a few times a week. It’s a game I’ve been playing since I was a kid.” FOREHANDS ON THE FOURTH OF JULY “We had a lot of people at the event, and in this heat, it was a miracle,” Saul Krevacas explained. “Creek Ball has been around for nearly 10 years, and we love the game. It’s played on a softer surface with a red dot ball—like the ball used in tennis lessons. Paulo created a great event where we got to nibble on fruit and pastries and socialize.” Creek Ball is a proprietary racquet sport of Frenchman’s Creek, offering a fun and engaging variation of pickleball. It appeals to players looking for a new challenge on a familiar court set up. The court size and layout are identical to those of a standard pickleball court; however, unlike pickleball, it is played on a Har-Tru surface. Both the tennis and Creek Ball players at this holiday event encouraged and inspired one another to perform at their best. The members left the courts with smiles on their faces, ready to celebrate and play again at their next racquet sports opportunity. Another member, who played Creek Ball, chimed in, saying the group was friendly, competitive and encouraging.

Creek Ball is a racquet sport that off the-beaten-path tennis enthusiasts enjoy—particularly because the Har Tru clay surfaces offer different playing experiences. The speed and bounce of the ball add a new strategic element to the game. Played at Frenchman’s Creek for nearly a decade, Creek Ball provides a unique twist for club members. Let’s review the details that make this proprietary racquet sport enjoyable. Court Size and Layout Dimensions: The court size and layout for Creek Ball are identical to those of a standard pickleball court. This includes the same dimensions for the net and playing area.
Surface: Unlike the hard surfaces typically used for pickleball, Creek Ball is played on a Har Tru (clay) surface. This provides a different playing experience, affecting the speed and bounce of the ball and adding a new strategic element to the game.
Equipment Ball: Creek Ball uses a “red dot” ball, which is a larger-sized tennis ball commonly used for teaching children. This ball is softer and slower than a regular tennis ball, making it easier to control and play with. Paddle: Instead of the standard pickleball paddle, Creek Ball players use a beach tennis paddle. Rules and Regulations The rules and regulations of Creek Ball follow those of pickleball closely, with the primary differences being the surface, ball, and paddle used. The core elements include: Scoring: Creek Ball uses the same scoring system as pickleball, where games are typically played to 11 points, and a team must win by at least two points. Matches can be played in singles or doubles format. Serve: The serve must be made underhand and diagonally cross court, starting from behind the baseline. The server continues serving until a fault is made.
Double Bounce Rule: The ball must bounce once on each side of the net before players can hit it in the air (volley).
Non-Volley Zone (Kitchen): A non-volley zone extends seven feet from the net on each side. Players cannot volley the ball (hit it in the air) while standing inside this zone. Faults: Common faults include hitting the ball out of bounds, hitting the net, stepping into the non-volley zone while volleying, and failing to follow the serve rules. Playing Strategy Clay Surface: The Har-Tru surface slows down the game and affects ball bounce, making positioning and shot selection critical. Players may need to adjust their movement and shot strategies compared to playing on a hard court. Red Dot Ball: The larger, softer ball used in Creek Ball changes the pace and dynamics of the game.
